Tracking RV Water level off water meter

Hi guys, I'm trying to figure out a good way to calculate my remaining water level in my 800l RV fresh water tank. Thinking of installing a water meter, but not sure how I could design the system to work through the DB. I typically need to refill monthly and would love it if I could just reset GEM's counter to zero and see cumulative usage after that. Perhaps I just need to keep track of last date it was filled and could manually query the database based on that date.

Can anyone recommend a good workflow for checking water usage since last tank top-off?
