I would try anything you have around (if you have something around) before you order anything.

Anywhere between 1k and 5k preferably.

I ordered a pack of 4.7k Ohm Resistors on Amazon.
I added resistors on the 5V line and DATA line. Voltages did no change (I took measurements with and without a sensor connected). I also added a resistor on the GND line and it made no difference.

GND and V lines = 5V
GND and DATA = 1.3V
V line and DATA = 3.8V

With no power applied, there should be about 5k ohms between GND/Data. Can you check that with your multimeter?

Without anything connected? (Including the 4.7k ohm pullup).

It sounds like with the lightning the port that controls the 1-wire was damaged.

Does everything else work?

Correct - nothing connected including the pull-up. I have not noticed any other problems with the GEM.

It's possible to have just fried the one port without it affecting any other functions of the GEM.
