I have configured the GEM to be in station mode and join my normal wifi network.

However it also seems to have setup an AP called GreenEye_5C - my assumption was that in station mode the AP would be off? Is there a way to turn it off?

Double check and make sure you can pull settings from it through your network.

I would secure the AP then hide it under Access Point settings.
